Chicken Cabbage Soup
Low carb Chicken Cabbage soup made in the Instant Pot is an easy way to get dinner on the table. This low carb soup can be topped with sour cream and cheese to make it festive and cheesy!
Have you ever added salsa to soup?
I’ll preface this by saying I’ve not searched this to see if salsa in soup is a thing but I will right now. Brb.
Okay, so, it IS a thing. I knew this didn’t originate with me, even though I’ve never heard of it or had ever tried it to my knowledge. But I tried making chicken cabbage soup a few weeks ago and I’m like… “WHY DID I NOT TRY THIS BEFORE?” I know that soup is delicious and salsa is too but I never thought to mix the two. We mix tomatoes into soup, so why not add tomatoes with the good stuff? I guess maybe it’s akin to adding RoTel to stuff?
Which salsa should you use?
What KIND of salsa should you use? Um, what kind should you NOT use? I’d say the kind that sets your tongue on fire? I mean, salsa has limitless options. In my cupboard, I have peach salsa, mango salsa, corn salsa, chipotle salsa (okay I like salsa.. It was also on sale.. And we often have guests over so it’s handy). I think I’d skip the fruity salsa for this recipe and maybe stick with the savory. I used fresh salsa from the refrigerated section in my recipe. You’ve got so many options.

- Cabbage (shredded)
- Cooked chicken (shredded)
- Chicken Stock
- Garlic powder
- Sour Cream (Omit if DF)
- Shredded Cheese (Omit if DF)

When using the beloved Instant Pot, I love to saute whatever I can before turning it into soup. Why? FLAVOR. When onions begin to carmelize and cabbage too it adds an extra layer of flavor that is worth the extra few minutes. And let’s just take a moment to appreciate the saute mode on the Instant Pot. I totally love that feature!
I used homemade chicken stock. This was some that I froze to use for such a time as this. I love having stock on hand for using in recipes that I know has good ingredients and is flavorful.
Is Cabbage Low Carb and Keto-friendly?
Cabbage is incredibly low carb. One cup of shredded cabbage is about 2 net carbs, so load on that cabbage and don’t be afraid to allow it to make regular appearances in your cooking (that is, unless you have some sort of intolerance, then don’t).
Meal Prep Option
Since I like to keep easy meals in the fridge, I went ahead and portioned out several jars of chicken cabbage soup to enjoy in the coming few days. This is an easy way to meal prep. If this is too light of a soup for you, you can add sour cream, cream, and/or cheese. To increase the fat content.

Chicken Cabbage Soup
- ½ C finely sliced onion
- 6 C shredded cabbage
- 1 Tbsp oil for sauteing
- 1-½ C shredded cooked chicken
- 4 C chicken stock
- 1 C salsa*
- ½ t garlic powder
- Salt to taste
- 4 T Sour Cream Optional
- 4 T Shredded Cheese Optional
- In an Instant Pot on Saute mode, add the oil and onions.
- Sautee for 2-3 minutes until browning starts.
- Add shredded cabbage and saute for another minute or two.
- Add chicken, stock, salsa, garlic powder, and salt (you can add more salt later)
- Switch Instant Pot to soup mode. Cook for 16 minutes.
- Allow steam to release either naturally or you can turn the release valve (careful!).
- Optional: add sour cream or a dash of heavy cream to make the soup creamy. You can also top with some shredded cheese. Nutrition facts do not reflect these additions.
