Would you like an easy low carb dinner with a few simple ingredients but outstanding flavor? Just add some Dijon mustard, heavy cream, and garlic to your next chicken recipe.

While walking down the condiment aisle at the grocery store there are way too many mustard varieties. Even in the Dijon family, there is a LOT to choose from. Which one is the right one? Which one do YOU like?

Isn’t that so much of what cooking comes down to… what tastes good! I personally found Maille Original Dijon mustard (not a sponsored post) to give the right balance of zing and kick for this Dijon roasted chicken recipe. Maybe what attracted me to Maille Mustard was the packaging, because it is darling! Or maybe it was because there was a rebate on Ibotta for it. However, the flavor is what really won me.

Ibotta is a grocery rebate app. In 2018 I earned over $1,000 in rebates and bonuses. If you haven’t used Ibotta, you really need to get on it. Not only do you earn $ just for signing up, but you can also earn rebates on groceries that you were probably already going to buy. It is also a great way to learn about new items on the market. Sometimes the rebates make the items totally FREE after rebate! You can also cash out your rebate to things like your Paypal, Venmo, gift cards like Amazon, Walmart, Target… and so many other places. Honestly, when I shop at Walmart, I PAY for my groceries with Ibotta rebates and bonuses.

For the Recipe – Dijon Roasted Chicken

We used 4 chicken thighs, bone in, skin on. If you prefer boneless, it will take less time to cook. If you prefer skinless there will be less fat. The choice is yours. You can even do these as chicken breasts, again, you choose.

Pro tip: when buying chicken compare prices. I went to a more “upscale” grocery store and found that the SAME chicken in the 4-pack tray was $.99/lb and the 2-pack was $2.49 or something like that. Ridiculous. So, of course I bought the 4-pack!

Go ahead and press plenty of garlic and mix it with heavy cream and the Dijon mustard. Dredge (heavily coat) each side of the chicken thighs and place in a cast iron pan for baking. Roast at 375°F  until the internal temperature is above 180°F  (to be on the safe side!).

This Dijon roasted chicken would pair perfectly with our Every Night Broccoli. You could even roast it while your chicken bakes. Cooking times may vary if you’re cooking both together, but just keep an eye on it.

If you have a large family, this would double beautifully.

An easy roasted chicken recipe with a kick of flavor from Dijon mustard.  Easy to make with ingredients you probably have on hand.

Ingredients

  • 1-2 lbs Chicken Thighs

Sauce for the chicken

  • 1/4 cup dijon mustard
  • 1/4 cup heavy cream
  • 4 cloves garlic pressed
  • 1/2 tsp salt
  • black pepper to taste

Instructions

  • Preheat the oven to 375°F 

For the coating

  • Mix all of the ingredients, except for the chicken
  • Dredge each chicken thigh with the coating sauce and place in an oven-safe dish.

Bake

Notes

You can use chicken thighs with or without the skin and bones. Your choice. Each will yield a different result and cooking times may vary. Simply keep an eye on the temperature to make sure it is done.
