Creamy Cauliflower Soup with Bacon and Mushrooms

Instant pot cauliflower soup is loaded with bacon and mushrooms for a seriously delicious (but easy-to-make) low carb soup. It is the kind of soup you can make for a party, for meal prep, or just for a quick weeknight meal.

Let’s face it, there are people who like soup a little and there are people who enjoy soup all year long. Regardless of what camp you’re in, you’ll enjoy this cauliflower soup.

If I could describe it, it would be a seafood-free low carb chowder. The mushrooms and bacon and cream mixed with the cauliflower make it a creamy chowdery kinda soup.

Tips for making this Low Carb Cauliflower and Mushroom Soup

Making this creamy cauliflower, bacon, mushroom soup requires only a few steps. Instructions for making this soup on the stove are found in a lower section of this post.

The first thing you’ll do is saute the bacon on the saute mode.

Cook it until it is crispy then spoon it out and set it aside while everything else cooks.

Saute the onions in the leftover bacon fat for several minutes then add the mushrooms and saute them for another minute or two. Add in the garlic, salt, and red pepper and heat that for 30 seconds.

Add the cauliflower and water (or stock) and close the Instant Pot lid and make sure the sealing valve is closed.

Set the Instant Pot to soup mode for 6 minutes. The total time to reach pressure and quick-release pressure is about 15 minutes in an 8qt Instant Pot.

Finish making the soup with heavy cream

The final steps include stirring in the heavy cream and serving the soup then topping each portion with some of the bacon that was cooked at the beginning.

Optional: Add in some cheese or sour cream if you want the soup to be even creamier. If you want the soup to be thickened, you could whisk in 1/4 tsp xanthan gum.

To make this cauliflower soup without the Instant Pot, you can use a 5qt (or larger) soup pot.

  1. Cook the bacon, until crispy then remove it.
  2. Add the onions and allow them to cook in the bacon drippings.
  3. Add the mushrooms and allow them to cook.
  4. Add the cauliflower, spices, and liquid.
  5. Cover and bring to a boil then reduce to medium-low for 15 minutes.
  6. Add the cream and serve. Top with the crispy bacon.

Ingredients

  • 6 slices Bacon diced
  • 4 cups Cauliflower florets
  • 4 cups Water or chicken stock for more flavor
  • 8 oz Mushrooms quartered
  • ½ cup Onion Thinly sliced
  • 3 cloves Garlic minced
  • ½ cup Heavy Cream
  • ¼ tsp Crushed red pepper
  • 1 tsp Salt

Instructions

  • Saute bacon and cook until crispy*(this takes about 5 minutes). Scoop out the bacon and leave the fat in the Instant Pot.
  • Saute the onions for 2-3 minutes then add the mushrooms and cook for 2-3 more minutes and add the garlic, salt, and red pepper and stir for another 30 seconds.
  • Add the water and cauliflower and close the lid and make sure the sealing valve is closed.
  • Cook on soup mode for 6 minutes (15 minutes to reach pressure and release pressure).
  • Once the cooking cycle has finished, do a quick pressure release. Stir in the heavy cream.
  • Serve the soup and top it with the crispy bacon.

Notes

Note: Nutrition facts reflect using water as the liquid. If you use chicken or vegetable stock, the nutrition values will change.
If you add stock instead of water, only add 1/2 tsp salt and then add more at the end if you think it needs more.
