You can use boneless or bone-in pork chops for this keto smothered pork chop recipe. Boneless will cook faster but bone-in may have more flavor.
The cook time in the recipe card is for boneless pork chops, you can add a few minutes to the browning time if you use bone-in pork chops.

The ingredients for this low carb pork chops recipe are super simple!
- Pork Chops (Boneless or Bone-in)
- Butter
- Mushrooms
- Onion
- Stock (Chicken or bone broth)
- Heavy cream
- Sour cream
- Garlic powder
- Salt
- Pepper
Tips and steps for making these Keto Smothered Pork Chops in the Instant Pot
Since boneless pork chops aren’t super fatty, you need to use some oil so that the pork chops won’t stick to the Instant Pot.
Heat the oil on saute mode.
Cook the pork chops on each side for 2-3 minutes. Once the pork chops are cooked, set them aside. If the pork chops don’t all fit in the pan, cook them in batches.
Add the mushrooms and onions to the pan. There should be residual oil from cooking the pork chops but if you need to add more, go ahead. Saute the mushrooms and onions.
Add the stock and stir in the salt, garlic powder, and cream. In order for the Instant Pot to pressure cook, it needs liquid. That is why we’re adding this liquid, it is also what will make the sauce.
Place the pork chops on top of what is in the Instant Pot. Close the Instant Pot lid and make sure the sealing valve is closed.
Set the Instant Pot to 12 minutes. Once the cook cycle finishes (it takes about 25 minutes to reach pressure and complete the cook cycle) allow the Instant Pot to do a natural pressure release (NPR) for 5 minutes. Then do a quick steam release for the rest of the steam.
Carefully open the Instant Pot and set the pork chops aside and stir in the sour cream. This should thicken the sauce a bit.
If you want the sauce to be thicker you can switch the Instant Pot to saute mode and allow some of the liquid to reduce.
If you add the sour cream during the pressure cooking process, it will become a bit chunky. It is best to add the sour cream at the very end!
Serve the keto smothered pork chops with your favorite low carb side. Optional: Garnish it! Use some fresh herbs like parsley.

Keto Pork Chops – Instant Pot
Ingredients
- 1 lb Pork chops bone-in or boneless* For bone-in 1.5 lbs for bone weight
- 1 tbsp Oil avocado or similar
- 2 cups Mushrooms Sliced
- ½ cup Sliced onion
- ½ cup Stock beef, chicken or bone broth
- ¼ cup Heavy cream
- ¼ cup Sour cream
- ½ tsp Garlic powder
- ½ tsp Salt (more or less to taste)
- Pepper To taste
- Garnish: minced parsley Optional
Instructions
- Heat Instant Pot to saute mode and add the oil.
- Cook the pork chops in batches (if they don’t all fit in one batch) 2-3 minutes per side.
- Set the pork chops aside and add the onions to the Instant Pot, saute about 30 seconds.
- Then add the mushrooms and saute for 1 minute, stir continuously.
- Pour in the stock and stir in the salt, garlic powder, and cream.
- Place the browned pork chops on top of the mixture and close the Instant Pot lid.
- Cook on manual – high for 12 minutes then allow the pressure to naturally release for 5 minutes. The total time is about 25 minutes.
- Release any remaining pressure by carefully turning the pressure valve.
- Open the Instant Pot and pull out the pork Stir in the sour cream. Turn the Instant Pot to saute mode to cook down the sauce to the thickness you prefer.
- Serve the pork chops with the mushroom sauce.
