Personal peach galettes that are not only low-carb and sugar-free, but also can be dairy-free! It’s true. You read that right. This keto-friendly peach galette is made without refined sugar or traditional flour.

Galettes: a flat round pastry.

There are so many kinds of galettes. I grew up in Pittsburgh and there, galettes were like a mini waffle served at Christmas time.

Some make them savory. Some make them sweet. Essentially there are no rules. Just make it round, I suppose.

Many filled galettes are large and make several servings. They might make the crust oversized and fold it up and over the filling part way. Some only make a little edge. As I said, no rules.

The galettes for this recipe are personal sized and would be a fun activity to make with children. They’re also sugar-free if you’re trying to stay away from refined sugar!

Are Peaches Low Carb?

One medium peach is about 12 net carbs. For people pursuing a low-carb lifestyle, peaches should be consumed in moderation. This recipe calls for 1 medium peach, thinly sliced. This means that each peach serving is only about 3g net carbs!

What is Monkfruit Sweetener?

Monkfruit sweetener is a low-carb and keto-friendly sweetener that is made from a mixture of monkfruit and erythritol. It has zero net carbs and measures 1:1 like sugar. It also has a zero glycemic impact which means it is a great sweetener for diabetics. Lakanto is the brand that I prefer and they make golden, white, and powdered versions. Many enjoy the golden variety as a substitute for brown sugar. The powdered variety is 2x sweeter than sugar, so you don’t need to use as much.

Most dessert recipes on the Yellow Glass Dish use monkfruit sweetener like our Blueberry Clafoutis, Lime Bars, and Low Carb Souffle Pancakes.

Low Carb Peach Galettes

Personal-sized peach galettes are keto-friendly and low carb. Made with one peach, thinly sliced on a crust that is gluten and dairy-free.

Ingredients

For the crust

  • ½ cup Almond flour
  • 1 tbsp Coconut flour
  • 2 tsp Unsweetened nut milk COLD
  • 2 tbsp Coconut oil COLD
  • Pinch of salt
  • 1 tbsp Monkfruit sweetener

Filling

  • 1 cup Thinly sliced Peaches 1 medium peach
  • ¼ tsp Cinnamon
  • 1 tbsp Monkfruit sweetener
  • 1 tsp Lemon juice
  • Whipped Cream (Optional topping)

Instructions

  • Preheat the oven to 350°F.
  • In a medium-sized mixing bowl, mix the dry ingredients (almond flour, coconut flour, salt, monkfruit sweetener).
  • Add chilled coconut oil in pea-size (or small chunks) to the dry ingredients.
  • Mix everything with a pastry blender or two forks until the chilled coconut oil is well incorporated.
  • Add chilled nut milk 1 tsp at a time. The crust should come together in a ball after about 2 tsp of nut milk. If it is not coming together add another ½ tsp *you don’t want to add too much, or else it will be too sticky to work with.
  • Separate the crust into 4 equal portions.
  • Roll each portion out on a piece of parchment paper.

For the filling

  • In a bowl, combine thinly sliced peaches (about 20-24 thin slices), monkfruit sweetener, cinnamon, and lemon juice. Toss gently until everything is covered.

Build the galettes

  • Place 5-6 slices of peach on the center of each galette.
  • Pinch and roll the sides together. The galette crust won’t cover the fruit. Just build a little edge around the fruit.
  • Bake the galettes at 350°F for 15-18 minutes or until the crust is golden brown.

Optional

  • Serve with whipped cream (either dairy-free or traditional).

Notes

**You CAN use frozen peaches, but add 5+ minutes to the baking time.
