I remember climbing into the minivan and claiming my spot for the foreseeable future.
We were on our way to Illinois.
What was in Illinois? Let me tell you about a lady who was pretty special to me. When we arrived at her house we were all bleary-eyed but super excited to see grandma. She was in her late 70s when I was born, so I never knew her as a “young grandma”. Her bungalow was a pretty magical place to me. The upstairs was an apartment, we stayed there when visiting. The closets off the upstairs living room held hidden treasures that were fun to discover on every visit.
We didn’t get to visit her often, but we loved seeing her and exploring her little town. My sisters and I used to walk through town to the dairy queen to get a cone or whatever the cheapest item on the menu was. We’d peruse the thrift store and maybe take a peek in the drug store. That was about all there was to see. Then we’d walk back and play some more in the white bungalow.
Maybe that is where my love for bungalows began because when I buy a house, I hope it’s a bungalow.
Time moved, grandma aged, we got older and our visits to Illinois were soon coming to a screeching halt. Grandma was diagnosed with Alzheimer’s and she couldn’t live by herself anymore. At that point, she had been a widow for twenty years.
My mom headed out to IL with her brothers to sell that precious bungalow. The one with plants lining the porches. The one with the little garage that was nearly falling. The house that held endless Y2K provisions. The house that was the stage for many of my childhood memories.
While my mom had a fully stocked kitchen, she decided to bring along goods from grandma’s kitchen — because there were 4 girls and perhaps we’d use some of those goods.
It became mine
When I was packing up to move when I got married, I made sure to get the things I wanted that had belonged to grandma. This enamel pan is one of those pieces.
I wonder what stories this pan tells. Other than the fact that it tells the story of my grandma, I wonder where the scratches came from or what it was commonly used for before it became part of my kitchen.
I guess we’ll never really know.
Is This Roasted Chicken Recipe Low Carb?
This keto chicken recipe is low carb. By adding small amounts of ingredients to the chicken, one serving is only 3g net carbs! If you add extra salsa or bell peppers, the carb content will increase slightly. Be sure you use a salsa that doesn’t have sugar in it.
Ingredients For this Keto Tomato Chicken recipe
For this roasted keto tomato chicken recipe, I’ve used bone-in, skin-on chicken thighs. You can use any variety but I highly recommend thighs because the meat is more flavorful. You can assume that if I am cooking a chicken recipe I’m probably using thighs because they’re juicy and flavorful.
As for what makes this “red” chicken– it is salsa, red peppers, and cherry tomatoes. On the bottom of a 9×13 baking dish, place a layer of thinly sliced red peppers, then spoon a thin layer (1/3 c) salsa across the peppers. Salt and pepper each thigh and place it on the salsa/pepper layers. Top each thigh with a spoon of salsa. Bake at 400°F and make sure the internal temp reaches 180°F.
You can use any kind of salsa you’d like. I’m sure a fruity salsa would taste fine, but I haven’t tried that– if you do please let me know how it goes (do note, fruit salsa probably has added sugar so check the carb content)!

Red Roasted Chicken
- 3-4 lbs Chicken thighs (Bone in, skin on) trim off extra skin
- 1 Red bell pepper Sliced thin
- ⅔ c Salsa
- 1 C grape tomatoes whole
- Salt to taste
- Pepper to taste
Prior to baking
- Preheat oven to 400°F
- Place pepper strips on the bottom of the pan*
- Spoon a thin layer of salsa over the pepper strips
- Place thighs on top of the pepper and salsa base
- Salt and pepper each thigh
- Spoon 1-2 T salsa on top of each thigh
- Add grape tomatoes around the edges of the chicken
- Roast at 400°F for 40 minutes
- Check that internal temp is 180°F
- Broil for 5 minutes to crisp skin
You can save the roasted chicken juices and whatever is left in the pan as a base for soup! This is where you can easily get flavorful soup :).
