Ingredients

  • 2 Medium Zucchini batonnet cut
  • 8 oz Ham Small 1" Slices
  • 2 cloves Garlic minced
  • ¼ tsp Red pepper flakes
  • 1 tsp Oyster sauce
  • 1 Tbsp Soy sauce*
  • 2 Tbsp Avocado oil* for frying

Instructions

The trick with any stir fry is having everything ready because the actual cooking process is pretty fast

  • In a bowl mix pepper flakes, oyster sauce, and soy sauce.
  • In a wok or frying pan, Heat avocado oil on med-high
  • Add garlic and stir for 5 seconds
  • Add zucchini, stir fry for a minute, stirring frequently
  • Add ham
  • Then add sauce mixture
  • Quickly stir fry for several minutes then remove from heat.

Notes

If you want to use a soy sauce alternative, you could try coconut aminos
Oyster sauce contains sugar and gluten -- so this recipe is not gluten-free, however, the amount called for in this recipe contains less than 1.5g of net carbs
I suggest using avocado oil because it has a high heat tolerance. Avocado oil and coconut oil can be used a high heat. Olive oil should not be used for this recipe.
You can serve this alone (fewer servings) or with cauliflower rice.
