Pickled red onions that are sugar free? How?

If you’ve never had pickled red onions you are missing out. They are so easy to make. Like, stupid easy. I am ashamed that I didn’t learn how to make them until recently. It kind of feels silly to make a dedicated post to this but I didn’t want this to get lost on another recipe post! They’re way too worthy of a post of their own.

When I was pregnant I lived on pickles and tart sour goodness. I wish I had jars upon jars of these then! Alas. Learners gotta learn and regretters gotta regret.

Whats In Them?

If you’re avoiding sugar, these are perfect! We used erythritol to sweeten these but if you need to use a different sweetner, go right ahead. Monk fruit sweetner would also be a great choice. You only need onions, salt, apple cider vinegar, sweetener, and water. THAT easy.

For some reason these are making me think of nova-lox omelettes. I’m positive that these would be a delicious addition to half of what you eat. With eggs, yep. On a salad? Yep. With meat? yep. With soup, maybe. Chopped up and mixed tomatoes as bruchetta? Absolutely! Part of meat and cheese roll-ups? You betcha! Gonna go make some, be right back.

These Pickled Red Onions are also a great topping for tacos and salad bowls. The tangy flavor adds a great punch but doesn’t overpower the other flavors. I’ve added them to basically all of my carnitas recipes!

If you had to choose a few things to add these to, what would they be? They would go great with our Delicious Instant Pot Carnitas!

These hold for several days in the fridge. They probably won’t last that long though! That’s okay, they’re so easy to make, you’ll be able to make another batch when they run out.

Ingredients

  • 1 Red onion thinly sliced
  • c Apple cider vinegar
  • 2 t Erythritol
  • ¾ c Hot water
  • 2 t Celtic salt

Instructions

  • In a pint mason (wide mouthed) jar mix liquids, salt and sweetener
  • Add thinly sliced red onions
  • Make sure all onions are immersed in liquid
  • Refrigerate for at least an hour

Notes

These are best consumed right away, but they should be fine for about 5 days in the fridge.
