Sugar-free Pickled Red Onions

Pickled red onions that are sugar-free and keto-friendly? These pickled onions take minutes to prepare and are ready to enjoy in an hour!

If you’ve never had pickled red onions you are missing out. They are so easy to make. I am ashamed that I didn’t learn how to make them until recently. It kind of feels silly to make a dedicated post to this but I didn’t want this to get lost on another recipe post! They’re way too worthy of a post of their own.
If you want a quick pickle flavor that is low carb, these fit the bill!

Whats In these Low Carb Pickled Onions?
If you’re avoiding sugar, these are perfect! We used erythritol to sweeten these but if you need to use a different sweetner, go right ahead. Monk fruit sweetner would also be a great choice.
You only need:
- Onions
- Salt
- Apple cider vinegar
- Sweetener
- Water

What do you serve these with?
These Pickled Red Onions are also a great topping for tacos and salad bowls. The tangy flavor adds a great punch but doesn’t overpower the other flavors.
I’ve added them to basically all of my carnitas recipes!
You can also serve them with this low carb Instant Pot taco meat!

How long can you store these pickled onions?
These hold for up to 5 days in the fridge. They probably won’t last that long though! That’s okay, they’re so easy to make, you’ll be able to make another batch when they run out.

Pickled Red Onion
Ingredients
- 1 Red onion thinly sliced
- ⅓ c Apple cider vinegar
- 2 t Erythritol
- ¾ c Hot water
- 2 t Celtic salt
Instructions
- In a pint mason (wide mouthed) jar mix liquids, salt and sweetener
- Add thinly sliced red onions
- Make sure all onions are immersed in liquid
- Refrigerate for at least an hour
