Made In An Ebelskiver Pan
Uncured bacon and egg bites, did I just write that? YES! Mix up a batch of these egg bites and make them in an ebelskiver pan (pancake balls in American lingo).
Ebelskiver Pans
My mom had a cast iron ebelskiver pan. We didn’t use it often. Or ever, really. An ebelskiver is a Danish apple pancake. It is made in a special pan and it is like a mini popover (except you flip it over). When I was traveling in Europe the times I had these pancake balls, they didn’t have apple in them. They were covered with powdered sugar and smothered in butter. Yes, please.
One of my college professors gave us his ebelskiver pan, knowing that he probably wouldn’t be using it since his wife had passed away. It even came with a knitting needle. Traditionally, ebelskivers were turned over using a knitting needle because of the thin, pointed tip.

How to make Bacon Egg Bites (in an Ebelskiver pan)
There are several elements to making ebelskivers. Obviously having the pan is a big one. But using a non-stick spray, oil, butter, or bacon grease to grease the pan is very important! I suggest you use a non-stick spray. Also, to keep the pancake fluffy, the egg whites need to be whipped using a mixer of some sort.
This recipe isn’t actually an ebelskiver recipe because it doesn’t have apple in it. It is just made with the pan and using some of the elements of making a good ebelskiver. Maybe someday I’ll make a low-carb ebelskiver recipe. However, today is not that day.
By whipping the egg whites, it keeps the batter light and airy. When mixing the egg yolk, cheese, bacon, and spices make sure to gently fold in the egg whites, or else they will deflate and thus make for a sad experience.
Don’t fill the slots in the pan all the way, ¾ full is just right.

You need a pointed object to flip the egg bite. You could use a knitting needle (traditional method). If you don’t have an extra knitting needle lying around, you could probably use a sharp chopstick or sturdy toothpick for flipping.
Be sure to add more oil to the pan between each batch. You can saturate a paper towel with oil if you want to use less oil, or you could use a spray oil.

- Shredded Cheese
- Bacon crumbles
- Green onion
- Salt & Pepper
- Non-stick spray

Bacon and Egg Bites
Ingredients
- 6 Eggs
- 1/4 cup Cottage cheese
- 1/2 cup Shredded cheese (+ more for garnish)
- 4 Slices Bacon Crumbled
- 1 Green onion Finely sliced (Tops discarded)
- Salt and Pepper To taste
- Non-stick Spray* (Like Avocado Oil Spray)
Instructions
Batter Preparation
- Separate egg yolks from egg whites, place egg whites in a large bowl.
- Whip egg whites using an electric mixer until soft peaks form.
- In a different bowl combine egg yolks, cottage cheese, shredded cheese, bacon crumbles, sliced green onions, and salt and pepper.
- Fold in 1/3 of the egg whites into the yolk mixture, mix thoroughly. Add additional egg whites 1/3 at a time until fully incorporated. Be gentle with folding.
- Heat ebelskiver pan on medium heat.
Cooking Ebelskivers
- Spray headed ebelskiver pan with non-stick spray.
- Fill each space about 3/4 and allow to cook until it begins to be firm.
- Using a pointed object (knitting needle, pointed chopstick, large toothpick…) loosen egg bite from the edge and flip it over.
- Allow all egg bites to cook until golden brown.
- Remove egg bites from heat and sprinkle with shredded cheese.
- Continue to make egg bites until all of the batter is used up. Serve hot.

You could make these with a mini muffin pan and bake them at 350F for about 10 minutes (or until fully cooked). Make sure you spray the pan well. 🙂
