Instant Pot Cabbage and Sausage Stew

Cabbage and sausage stew is a comforting Instant Pot recipe that is made with low carb ingredients. This stew is great for meal prep or for serving on a chilly day. This dairy-free stew can be made quickly using the Instant Pot and is 5g Net carbs per serving.
How Long Does This Stew Cook For?

Traditionally, stews cook for a long time to bring out the flavor.
Luckily for us, the Instant Pot has made this a much faster process! Between preparing this recipe and cooking it, it is ready in about 30 minutes.
The actual cooking time will depend on how long the Instant Pot takes to come to pressure and release pressure. On the 8qt, it took about 16 minutes for a 6-minute soup cycle.
What Kind of Meat does this stew recipe use?
This stew recipe is made with sausage. Sausage is a vague term and can come from many types of meat. Ground sausage is what you need.
You could use:
- Pork Sausage
- Beef Sausage
- Chicken Sausage
- Turkey Sausage
- Venison Sausage (this will make a more gamey tasting stew)
While some don’t prefer spicy sausage, it adds an additional level of flavor and is a great choice for this keto stew recipe.
Ingredients for this Low Carb Cabbage and Sausage Stew Recipe
The ingredients for this sausage stew or soup are super simple!
- Ground Sausage (the roll type)
- Onion
- Cabbage
- Chicken Stock (you could also use vegetable broth or bone broth)
- Fire-roasted tomatoes (this is important, they add so much more flavor than regular tomatoes!)
- Smoked Paprika
- Garlic powder
- Salt
Tips for making this Instant Pot Low Carb Sausage Stew Recipe
When making this keto stew recipe in the Instant Pot, the steps are pretty simple.
Brown the sausage on saute mode in the Instant Pot while you get the rest of the ingredients ready. This helps to save time.

Once the sausage is mostly cooked, push it to one side of the Instant Pot and cook the onions on the other side. If your sausage doesn’t have much fat in it, you could add a little oil before cooking the onions.

Dump in the rest of the ingredients and set the pressure cooker to soup mode for 6 minutes. If you’re using an 6qt or an 8 qt pressure cooker, the actual time to come to pressure and release will vary.

The 8qt Instant Pot took 16 minutes to come to pressure, cook, and finish the quick release.
Quick-release the pressure then open the Instant Pot away from you to make sure you don’t get hit with any remaining steam.

The stew is ready to serve! You can garnish it with fresh herbs if you’d like
Options for this Sausage stew if you’re not dairy-free

If you’re not dairy-free, you could add some sour cream and/or cheese to the finished soup after it has cooked. This will make the sausage stew creamy.

Instant Pot Cabbage and Sausage Stew
Ingredients
- 1 lb Ground sausage the chub roll – You can use pork, chicken, turkey, beef, venison, etc.
- ⅓ cup Onion diced
- 6 cups Cabbage Chopped
- 6 cups Chicken stock
- 14 oz Fire Roasted Tomatoes 1 can
- 1 tsp Smoked Paprika
- ½ tsp Garlic powder
- ¼ tsp Salt More to taste
Instructions
- Turn your Instant Pot to saute mode and brown the sausage* meat. While the meat cooks, move it to the side and add the onions. Allow the onions to cook until translucent.
- Add the cabbage and spices to the Instant Pot and mix it in with the meat. Add the stock and tomatoes.
- Close the lid on the Instant Pot and make sure the valve is sealed. Turn the Instant Pot to soup mode and set it to cook for 6 minutes. Once the pressure cycle is complete, do a manual quick steam release. (Total time to get to pressure and release pressure is 16 minutes)
- The soup is ready to serve. If you’re not dairy-free you could add sour cream and cheese.
