Instant Pot Keto Chicken Soup With Broccoli

Keto Chicken Soup with Broccoli and Cheese
This keto chicken soup with broccoli and cheese is an easy Instant Pot recipe. It is creamy and comforting, made with few ingredients. This soup takes only 25 minutes from start to finish!
Why Instant Pot Soups are Awesome
Since I began learning how to cook (around age 20) soups were an easy item to prepare. Some of my soups were underwhelming but some were amazing (if I do say so myself).
Ever since I got my 8qt Instant Pot, I’ve made bone broth and chicken stock then made soups using either broth or stock. By using the pressure cooker, it creates a dense flavor in a fraction of time. I love to use the saute mode to prepare onions and garlic then I can pressure-cook the soup. Sometimes I blend the soup, sometimes I don’t (like this soup).

Does Broccoli Have Carbs?
Broccoli does have carbs but it also has a lot of fiber. One cup of broccoli florets has 6 g carbs and 2.4 g of fiber. Net carbs are the actual carbs that your body processes and is calculated by taking the carbs and subtracting the fiber. This means that one cup of broccoli has only 3.6g net carbs. Go ahead and make as much keto broccoli soup as you heart desires, this soup is very keto-friendly.
Is Chicken Broccoli Cheese Soup Keto-Friendly?
The ingredients used in this chicken soup are very keto-friendly. One serving is less than 6 g net carbs. There are about 16g of fat per serving. This chicken broccoli soup also has 22g of protein which is excellent if you’re trying to meet your protein goals. If you’re trying to reduce your protein, just add less chicken to this low carb soup.

Tips For Making this Keto Soup In the Instant Pot
Saute Mode
The beauty of using the Instant Pot to make soup is that you can make it extra flavorful by using the saute mode. If you saute onions, it brings out an amazing flavor element with minimal effort. With that being said, saute your onions in some avocado oil. Once they’re translucent, add the garlic and stir it for a few seconds.
Instant Pot Settings
Once all of the ingredients are combined for the soup, put the lid on the Instant Pot and close the sealing valve. Cook on the Soup mode for 6 minutes. The total time for getting to pressure, cooking, then doing a manual steam release is about 18 minutes. Once your keto broccoli chicken soup is done cooking, carefully open the Instant Pot away from you.

Final Steps
Add the cream and stir in 1/2 of the shredded cheese. If you stir well, the cheese should mix throughout the soup.
Alternative Cooking Method
If you don’t have an Instant Pot, what are you doing??? Kidding. Sort of. Not really. I love my Instant Pot but I know that they’re not for everyone.
You could make this keto soup on the stovetop with similar instructions to the Instant Pot. Saute the onions with the avocado oil then add the garlic. Then add the stock, broccoli, and chicken. You’ll want to boil the soup for about 20 minutes or more on a low boil. When you’re almost ready to serve it, stir in half the cheese and the cream. Serve with shredded cheese. Viola. Your Keto broccoli soup with chicken is done!
