Roasted Cauliflower and Chicken Salad

With a Lemon Ricotta Dressing
This roasted cauliflower and chicken salad is a super easy salad to make but is loaded with flavor. Rotisserie chicken makes it super easy to have flavorful chicken that is ready-to-eat. Don’t forget to add the dressing!
Are you a fan of greens?
I’m going to be honest with you for a moment (um, I’m honest with you all the time) sometimes I’ll snack on salad greens. Like. Open the box and munch of greens. Nothing else. Just greens. I’d call that a win for a snack but most people don’t roll like that.
Why do salads at restaurants cost so much? I really cannot give you the details but I’m pretty sure they’re making a big buck off of them. Ingredients for salad are pretty darn affordable. What’s even better is if you shop sales and get what produce is on sale and in season.
Some people shy away from eating greens and vegetables while enjoying a low carb lifestyle but please don’t do that. Our bodies need nutrients from vegetables. There are plenty that are lower in carbohydrates to choose from!

Ingredients for this Roasted Cauliflower and Chicken Salad
My salad consists of things I had and stock in my fridge. You can totally survey your fridge and add or subtract based on what you already have. Now, I wouldn’t recommend pickles or anything crazy on this but you can choose what you want. Just remember that the nutritional information is based on the salad info in the recipe.

The thing I love about this salad is it consists of things that I almost always have in my kitchen.
- Greens
- Cauliflower
- Rotisserie Chicken
- Lemons or lemon juice
- Avocado oil
- Onion
- Carrots
- Radishes
- Avocado
The dressing calls for
- Avocado oil
- Lemon Juice
- Ricotta
- Garlic
- Salt
I absolutely love adding ricotta cheese to a lot of my food. I use whole milk ricotta cheese.
Roast The Cauliflower
For the roasted cauliflower and chicken salad, we roasted the cauliflower and onions with some avocado oil. This makes the cauliflower tender and have a rich depth of flavor.

How to make Lemon Ricotta Dressing
The dressing is super easy, tart, and something I’ll probably be making weekly around here. You can blend it with whatever blender you’ve got but we love our Vitamix and the smooth dressings it can make!
Blend the lemon juice, ricotta, garlic, avocado oil, and salt together. That is it!

Roasted Cauliflower and Chicken Salad with Lemon Ricotta Dressing
Ingredients
- 8 oz sliced Chicken
- 6 C greens
- 3 C cauliflower florets
- 1 T avocado oil
- Pinch of salt
- ½ red onion thin sliced
- 1/4 c shredded carrots
- 1/2 c sliced radish
- 1 Avocado
For the dressing
- 1/8 c lemon Juice
- 2 cloves garlic
- ¼ c ricotta cheese
- 2 T avocado oil
- Pinch of salt
Instructions
- Preheat the oven to 425 degrees
- Toss Cauliflower and onions with avocado oil and a pinch of salt
- Roast cauliflower and onions for 25 minutes — until slightly brown
- Fill a salad bowl with greens and top with desired toppings.
- For the chicken, we used rotisserie chicken meat.
Dressing
- Blend the dressing ingredients in a high-powered blender like a Vitamix for a smooth dressing
- Pour over salad
