Roasted Keto Cranberry Sauce

You’re probably asking, how many carbs are in cranberry sauce?
The truth is, traditional cranberry sauce is LOADED with sugar. One serving can have 28 grams of carbs, most of that is added sugar.
While traditional cranberry sauces are low carb, this cranberry sauce recipe is sugar-free and uses monkfruit sweetener instead of sugar. One serving of this (2 tbsp) is less than 4g net carbs.

The ingredients for this sugar-free cranberry sauce are all low carb and easy to find!
- Cranberries (fresh or frozen and thawed) Typically they come in 12oz bags but if its a 16 oz bag, that is fine too!
- Monkfruit Sweetener – Golden or white, either work!
- Lemon Zest – If you don’t have a fresh lemon, don’t worry about it
- Lemon Juice – Add some zing and acid to this!
- Pumpkin Spice – It has a mixture of the spices you want, simplify things when you can! (It’s also called Pumpkin Pie Spice)
- Salt

Tips and steps for this Roasted Keto Cranberry Sauce
This is basically a dump recipe. It’s the easiest kind of recipe that requires little effort!

Preheat the oven to 400°F while you get everything ready.

Once you put everything into a pan and mix it thoroughly, stick it in the oven.

About every 10 minutes, give it a stir so that the spices and flavors are well mixed.
It’s OKAY to mash the cooked cranberries a bit while stirring. This helps to break them apart with little effort.
If you want them juicer, take the pan out at about 25 minutes. If you want them on the drier side (how I prefer it) let them roast for about 35 minutes..

Of course, Cranberry sauce is most popular at Thanksgiving, but it doesn’t stop there!

You could add some of this cranberry sauce to chicken salad, to add a low carb fruit flavor.
Use this as a “jam” for anything you’d add jam to! This would be especially great on Simple Keto Chaffles topped with some rotisserie chicken or leftover turkey.

You could also simply serve it with roasted chicken or a rotisserie chicken.

Roasted Keto Cranberry Sauce
Ingredients
- 12 oz bag Cranberries fresh or frozen and thawed
- ½ Cup Monkfruit Sweetener Golden or white
- 1 tsp Lemon Zest
- 1 Tbsp Lemon juice
- ½ tsp Pumpkin Spice (More if you like spice)
- Pinch of salt
Instructions
- Preheat the oven to 400°F.
- Grease a 9×13 oven-safe dish.
- Mix all of the ingredients together in the dish.
- Bake for 30-35 minutes, stirring occasionally (about every 10 minutes).
- Cool and serve. Store in the fridge for up to 5 days.
