Every cook needs their secret ways of throwing together a delicious meal quickly, roasted cabbage is one of my secrets to success in the kitchen. This is an easy low-carb side that is packed with flavor but requires LITTLE effort to make.

One of the reasons I love roasted cabbage and roasting vegetables in general, is because of the caramelization that happens when the vegetables meet high temps. The simple adding of oil, salt, and pepper allows the vegetable to do its own thing, letting its flavors shine.

Cabbage is no exception.

I was surprised by how hard it was to find cabbage in the middle of winter at a decent price point. But when I found one I knew exactly what I was going to do with it.

Cabbage is one of those things that you either really like, or you rarely use. Some find it hard on their digestive system and thus avoid it. But if you’re not in that camp, you need to make it a regular part of your kitchen.

While living in China, fall was marked by trailer loads of cabbage and families taking home literal loads of cabbage. I guess each family fermented a big batch? It wasn’t Korea, so it wasn’t turned into Kimchi (which is also delicious!). We were often served cabbage soup of sorts.

My best friend lived across town and her apartment neighbors would leave the cabbage out in the stairwell. The stairwell was not heated and was very, very cold at times. But we were always questioning that cabbage and hoping that it wouldn’t end up in one of our meals.

I digress. Cabbage is versatile and usually pretty cheap. And delicious when roasted.

Is cabbage a Low Carb vegetable?

Yes! Cabbage is awesome for a low-carb or keto lifestyle. How many carbohydrates are in cabbage? One cup of cabbage is only 2g net carbs.

In looking at the vitamins and minerals found in cabbage, it’s absolutely packed! It has a great amount of vitamin C. It also has magnesium and potassium which are essential electrolytes that very much needed in a low carb lifestyle! So eat your cabbage, friends.

Tips for making this low carb Roasted Cabbage Recipe

This keto cabbage recipe is super simple to make. Preheat the oven to 400°F then slice the head of cabbage in half then cut each half in thirds.

Cut each portion into several wedges and place each wedge on a baking sheet. Some wedges might fall apart but you can easily stack them again.

Drizzle oil over each wedge and shake on a little salt and pepper.

Roast the cabbage for about 10 minutes then switch the oven to Broil mode. Broil for 2 minutes. This will allow the edges to brown and carmelize.

Ingredients

  • 1 head cabbage (approx 2 lbs)
  • Salt to taste
  • Pepper to taste
  • 2 tbsp avocado oil*

Instructions

  • Preheat oven to 400°F.
  • Cut the head of cabbage in half and then each side in thirds then in smaller wedges.
  • Place each wedge on the baking sheet with the wedge sticking up.
  • Drizzle each wedge with avocado oil and top with salt and pepper
  • Roast at 400°F for 10 minutes.
  • Turn on broiler for 2 minutes**

Notes

*Be sure to use an oil that can handle high heat. Olive oil should not be used for roasting vegetables as the heat point is too high.
** By turning on the broiler you’ll be able to caramelize the top without overcooking the cabbage
