You’re wondering if cabbage is good on a low carb or keto diet. I see you. The answer to your question is, there are about 2.5g net carbs per cup of (raw) cabbage.

When it comes to low carb and keto-friendly vegetables, cabbage is definitely one of them!

There are different varieties of cabbage (green, red, savoy, napa or Chinese) and each will yield different carb counts. This particular recipe is for green cabbage, the most common form of cabbage in the USA.

How to Cook Vegetables in the Instant Pot

Steaming and cooking vegetables in the Instant Pot is super easy to do!

It only takes a few minutes on the manual mode to cook cabbage. Other vegetables will take different amounts of time to cook. Some vegetables like broccoli and cauliflower cook on steam mode for 0 minutes!

The ingredients to make super flavorful cabbage in the Instant pot include:

  • Cabbage (Green) – in bite-sized pieces
  • Onion (Thinly sliced)
  • Garlic Cloves (Minced)
  • Butter
  • Salt
  • Chicken Stock*

If you want to use vegetable stock instead of chicken stock that is totally an option. In a pinch, you could use water but maybe add some extra salt.

This recipe does not require a steamer basket so, all you need is the Instant Pot!

Tips for making this Low Carb Cabbage side dish in the Instant Pot

It would be perfectly understandable if you just put water and cabbage in the Instant Pot and hoped for the best. But if flavor is what you love then hold tight and read these suggestions.

Browned butter makes the world go round. What is browned butter? Oh, it is when you cook the butter (on saute mode, in the Instant Pot) until the milk solids turn golden-brown. It gives a rich, nutty flavor to your food.

Brown the butter with the Instant Pot on saute mode

Once the butter is browned, saute the onions for 2 minutes and then add the garlic and stir for about 30 seconds.

Add in your cabbage, salt, and stock and give it a good stir.

Add the cabbage, salt, and stock to the mixture to cook it in the Instant Pot

Close the lid and make sure the sealing valve is closed!

Turn the Instant Pot to manual mode and set it for 3 minutes. Now, just wait until it comes to pressure.

Do a quick release and carefully open the Instant Pot away from you, serve your cabbage up.

You might want to use tongs or a slotted spoon to get the cabbage out of the Instant Pot. Since there is moisture IN the cabbage as well as the liquid needed to cook, there will be liquid that you can strain off. You can toss it or use it.

Ingredients

  • 1 Med-Lg Head of Cabbage (core removed diced in 1.5” pieces)
  • ½ cup Onion thin sliced
  • 3 cloves Garlic minced
  • 2 Tbsp Butter browned, optional
  • 1/2 tsp Salt more to taste
  • 1 cup Chicken stock Or vegetable stock

Instructions

  • Heat the Instant Pot to saute mode. Brown butter (optional) by heating the butter until the milk solids turn caramel-brown then add onions. Cook for 2 minutes. Add garlic, cook an additional 30 seconds. Stir in cabbage and chicken stock and salt. Mix.
  • Close the Instant Pot lid and make sure the sealing valve is closed. Cook on manual for 3 minutes.
  • Manually release the pressure. The total time to saute, pressure cook, and release was about 15 minutes.

Notes

Note: If you like spicy food, add ¼ tsp red pepper flakes to the cabbage.

    • Sorry for the late reply! The cabbage is not crispy but if you want to add a few minutes to the cook time it will soften.
